Stuffed Matar Puri : Drooling!! Isn’t it? These are the yumm Matar puris / Green Peas puris. Boiled peas, crushed, mixed with spices and stuffed inside the wheat dough and finally deep fried in oil makes these yumm peas puris. Absolutely delight and I m sure you will fall in love with them.
Ingredients
Maida (refined flour) – 1 cup
Wheat flour – ½ cup
Rice flour – 2 tsp
Milk – 2 tsp
Water as needed
Salt as per taste
Green peas (fresh, boiled)
Green chillies – 4
Coriander (chopped) – ½ cup
Garlic cloves – 4
Onion (finely chopped) – ½ cup
Jeera – ½ tsp
Turmeric powder – ¼ tsp
Lime juice – 1 tsp
Oil – 4 tsp
Method
To make the dough, add maida, wheat & rice flours in a bowl. Add salt, milk & mix it well
Add water (as required) to knead the dough & coat it with ½ tsp of oil & cover it with damp muslin cloth & keep it rest for 1 hour
To make the peas (matter) filling, in a mixer jar, add boiled peas, garlic, green chillies & coriander. Grind it just one round so that the peas are mashed a bit & the mixture is coarse
Take a non-stick pan. Add oil & heat it. Add jeera, turmeric & then onion. Sauté onions till they caramelize well. Pour the green peas mixture, add salt & give it a nice stir. Remove it from the flame & allow it to cool down
To make stuffed peas (matter) puris, take small portions of the dough, roll it flat & add 1 tsp of peas filling. Close the puri by covering the edge of the puri
Deep fry them in hot oil till they turn slight brownish
