Baba Ganoush is a Lebanese recipe which is smoky aubergine dip made with roasted eggplant (aubergine) & mashed with tahini. It is 100% vegan recipe! You may ask, what’s it taste like? Uber creamy, decadent, slightly sweet and the perfect balance of savory and tangy from the lemon and tahini. It’s so lush and creamy you can hardly believe it is vegan. Baba ganoush is a delicious dip that can be served with fresh veggies, bread sticks, garlic bread etc. Must try recipe I would say!
Ingredients
Eggplant (Big) – 1
Tahini – ¼ cup
Lime juice – 2 tsp
Garlic cloves (minced) – 4
Cumin powder – ¼ tsp
Kosher salt – ½ tsp
Fresh parsley (chopped) – 1 tsp
Olive Oil – 1 tsp
Roast Eggplant over high flame or roast in an oven. Roast till the skin burns and you get smoky smell.
Peel of the skin and scoop out the flesh.
Mash eggplant flesh with tahini, cumin powder, lime juice, garlic & salt. Drizzle olive oil and mash again. You can mash using hand blender
Sprinkle some fresh & chopped parsley and give it a good stir.
