Instant Tomato Pickle – In today’s busy world, we all love to get hold of some recipes which tastes super delicious but at the same time they can be made in a jiffy. Nobody would love to spend hours in kitchen when ww know that “Instant” recipes are existing. Presenting you one of such instant recipes of tomato pickle. Tastes heaven! This is a typical andhra pickle recipe…!

 

Ingredients:

  • Tomatoes (ripe) – 5
  • Dried red chillies – 2
  • Turmeric powder – 1/4 tsp
  • Jeera – ¼ tsp
  • Mustard – ¼ tsp
  • Curry leaves – 6 – 8
  • Hing – ¼ tsp
  • Jaggery (grated) – 1 tsp
  • Red chilli powder – 1 tsp
  • Mustard powder – ¼ tsp
  • Methi powder – ¼ tsp
  • Salt as per taste
  • Oil – 4 tsp
  • Fresh coriander (chopped) – ½ tsp

Method of Preparation:

  • Chop the tomatoes
  • Heat oil in saucepan and add mustards, jeera, dried red Chillies, turmeric powder and curry leaves.
  • Add tomatoes now and sauté till they turn soft & pulpy
  • Add a dash of asafetida, salt, jaggery, methi powder, mustard powder and red chilli powder – give it a good stir
  • Cook it for 5 min till tomatoes turn pulpy completely
  • Instant tomato pickle is ready to serve!
  • Garnish it with some fresh Coriander leaves and serve with steamed rice or rotis with a hint if ghee….slruppp! It’s as simple as that!
