Yes, I did grow a bunch of Microgreens at home and this is the first recipe using homegrown Microgreens. We can call this a Super Nutritional Soup as Microgreens brings in concentrated nutrients. It’s pretty simple to make – stir fry a bunch of freshly harvested microgreens, half onion, 2 cloves of garlic and grind it along with 2 boiled carrots. Grind it into smooth paste. Cook this on low flame, add pepper n jeera powder, salt and lime juice. Cook it till boil. Serve hot!

Ingredients:

  • Microgreens (Mustard / Alfalfa/ Any) – 1 bunch (handful)
  • Carrots (boiled) – 2
  • Garlic cloves – 2 -4
  • Onion (chopped) – ½
  • Pepper powder – ¼ tsp
  • Jeera Powder – ¼ tsp
  • Lime juice – 1 tsp
  • Salt (as per taste)
  • Oil – 1 -2 tsp

Method:

  • Stir fry chopped onion, garlic & microgreens in bit of oil (don’t cook it, just stir fry)
  • Add the stir-fried microgreens, onion, garlic, carrot & grind it into smooth paste
  • Take a pan, pour the ground mixture. Add lime juice, jeera powder, pepper powder & salt. Stir it nicely
  • Boil it for 5 – 10 mins & serve hot
