Sometimes, food depicts your mood…isn’t it? The theme was simple but lip-smacking, authentic but yet very desi kind….! Mashed aloo coated with spices and the floating butter on top of it makes it perfect “Pav Bhaji”. Soul soothing and drooling
Ingredients
Potatoes (Boiled) – 6
Onion (chopped) – 2
Tomato Puree – 4 tomatoes
Pav Bhaji Masala – as per taste
Frozen Green Peas – 1 cup (optional)
Butter – ½ cup
Red Chilli powder – 1 tsp
Salt as per taste
Oil – 4 tsp
Coriander (finely chopped) – 1 tsp
Method
Pressure cook potatoes for 4 whistles. Peel off the skin & mash it nicely
In a thick bottom pan, heat the oil & add oil. Add onions & saute it nicely till they turn brownish
Add tomato puree & cook it for 5 mins
Add mashed potatoes, pav bhaji masala, red chilli powder, salt. Give it a nice stir
Add boiled green peas (if you like ) & stir it
Add a generous amount of butter & cook it for 2 mins
Serve hot Pav with bhaji with a hint of butter floating on it along with finely chopped onions, coriander & a lemon piece
